SEVEN POINTS -- Walking into Dutchman's Smokehouse's funky little building is like stepping back in time in a lot of different ways. The motto is "Where Pitmasters Rock & Bar-B-Q Rolls," a homespun attitude which quickly becomes evident when you talk to David Poteet, whose wife Tina owns the family business and operates it with the help of her sons and daughters, according to daughter Nesie Poteet. For one thing, Dutchman's is owner-operated and the customers get a lot of special attention. However the customer wants the homemade food that is prepared onsite is how they obviously are going to get it. "Not everything we will serve is on the menu," said Poteet, who uses his grandfather's recipes. "We're going to give the customers what they want." Dutchman's, the "Home of the Dutchboy" sandwich which opened July 21, is a dream come true for lake residents and visitors who want to order prepared food they can take home or to their boat to serve. Meats by the pound weren't on the menu at first, but that's what a lot of people requested so they got it, Poteet said. "Once they come, they keep coming back," Poteet said. "I've gotten so many compliments my head has swollen and about to blow up." There's no air conditioning inside the tiny dining room that only holds only a couple of tables and chairs, but most of the eatery's customers aren't planning on dining there. A big fan will keep you cool long enough to get an order to go, or you can wait at the drive-in window in the comfort of your car while your food is prepared. If you are waiting inside, the aroma of the barbecue is sure to build up your appetite. There also are tables and chairs on the patio available for customers who will want to eat outside when the weather gets cooler. All of the barbecue and other foods offered at Dutchman's is smoked and otherwise prepared on site. In addition to brisket, pulled pork, chicken, smoked sausage, Dutch potato salad, red beans and bacon and fire roasted jalapeno peppers, there are tacos with beef, pork or chicken loaded with cheese, cilantro, onions and salsa. The tantalizing, overloaded Dutchboy Sandwich on fresh baked bread comes with brisket, pulled pork or chicken and is topped with grilled onions, sweet peppers, dill pickles and the special signature sauce or however you want it. The Sausage on a Stick is delicious as well. Customers can order "no fat, a little fat or a lot of fat" on their sandwiches, Poteet said. Loaded "Texas Taters," which are topped more full than you can imagine, are also available. And as though that isn't enough to order at one special fast food cafe, breakfast is served featuring handmade sausage and bacon with eggs on breakfast tacos on flour or corn tortillas. Poteet said his eatery, which he spent several months building from the ground up, came about because of the compliments he received from his customers for whom he processed wild hog and deer. He also cooked barbecue for the hunters, and they told him he was missing his real calling. "Everyone was telling me I needed to open a barbecue place because it was the best barbecue they ever had," Poteet said. "So here I am."
